Beef Tenderloin With Mushroom Duxelle Filling

1* Brandt Farms all natural beef tenderloin, trimmed

Duxelle Filling

1 pound assorted mushrooms cut very finely
3 large shallots cut very finely (a mini food processor is great for this)
oil for sautéing
finely chopped garlic
2 sprigs of fresh thyme
salt and pepper

Heat oil in a large skillet. Place finely cut mushrooms, shallots and garlic and sauté until all the liquid has evaporated. Season with thyme, salt and pepper.

Set aside to cool.

Slice tenderloin down the center and fill with the mushroom/shallot mixture.

Tie tenderloin.

Heat oil in heavy skillet until just smoking.

Saute tenderloin on all sides in the skillet and cook in 450 degree oven until desired doneness is reached.

  • 15 minutes – rare
  • 20 minutes – medium rare
  • 25-30 minutes – medium

Let meat rest for 8 minutes out of the oven.

Slice and serve.
